Chilled Strawberry Soup
Ingredients:
1 cup dry white wine (or sparkling cider- I like martinellis)
1/3 cup sugar
2 cups strawberries
1 cup orange juice
1/8 tsp. ground cardamom
fresh mint sprigs
heavy cream
Directions:
- Place the wine and the sugar in a saucepan. Heat to thepoint of boiling. Stir often to dissolve the sugar. Remove
from the heat.
- Meanwhile, puree the strawberries in a blender. Add the
strawberries, orange juice and cardomom to the wine mixture.
Allow to completely chill.
-Before serving, beat the heavy cream with a mixer until
thick and frothy. Add one spoonful of cream to each bowl of
soup and swirl. Garnish with a sprig of mint.
Random Plans for This Weekend: Today is the anniversary of my DH and I becoming a couple. We've been together 8 years, and married for 7 this spring. We're taking the whole family out for a very special dinner tonight at a nice restaurant because Valentine's Day isn't just for people you lust after, it's for people you love.
Random Progress for Under a Dark Star: Editing in layers has an unexpected bonus. I threw a line into chapter three that's creating tension through all the subsequent chapters that wasn't planned but that I *really* like. This is a ton of fun!
Random Research for Everyone This Week: A quick look at physics and faster than light travel in my writing and in sci-fi. It's good to learn things!

ReplyDeleteWe're skipping Valentines Day this month. Maybe when we have more money we'll go out to eat.... In the meantime, we'll try and find things to express our love to each other without money. :)
